The idea behind split testing is to test which ad copy, subject lines, and images work better by testing two variations of your message at the same time. When you send a message to your list, you send half of your list the first version of your message and then you send the other half of your list the second version of your message. The difference between each variation can be very simple such as a change in the subject line, or much more complex like changing the offer that you highlight in your message.
